Spinach Lasagne

Ingredients

1/2 pound fresh spinach
1/2 onion, chopped
1 garlic clove, minced
1 tablespoon olive oil
1 cup low-fat cottage cheese
1 egg, beaten
salt and pepper to taste
1 teaspoon basil
1/2 teaspoon oregano
2 tablespoons chopped parsley
1/2 pound lasagna noodles
1/2 pound mozzarella cheese
3 cups tomato sauce

Directions:

Wash spinach carefully, tearing out stems, and chop coarsely. Sauté chopped onion and minced garlic in oil. Combine sautéed onion and garlic with spinach, cottage cheese, and beaten egg. Mix well. Season with salt, pepper, basil, oregano, and parsley.

Cook lasagne noodles until tender. Coarsely grate mozzarella cheese. In a buttered oblong baking dish, layer noodles, cottage cheese mixture, mozzarella cheese, and tomato sauce, in order listed. Repeat layering 3 times, making sure tomato sauce is on top. Cover with aluminum foil. Bake at 350° for 40 minutes. Remove foil and bake 10 minutes more. Serve with garlic bread and green salad.
