Bring Home the Bacon

Ingredients

1 cup grated Cheddar cheese
1 cup cottage cheese
3 cups cooked rice
12 strips bacon, fried crisp and crumbled
1 cup sliced fresh mushrooms, or 1 (8-ounce) can, drained
1 pound fresh asparagus spears, or 1 (16-ounce) can, drained
1/2 teaspoon salt, or to taste
pepper to taste
1/2 cup butter or margarine
1 cup milk

Directions:

In small bowl, blend cheeses and set aside. Mix together rice and bacon; place in greased 9x13x2-inch casserole dish. Spread mushrooms over rice. Arrange asparagus spears on top of mushrooms. Sprinkle on salt and pepper. Top with cheese mixture, dot with butter, and pour milk over top. Bake 45 minutes at 350°.
