Crab Après la Chasse

Ingredients

1 small head broccoli
2 cups chopped onions
1/2 pound fresh mushrooms
2 garlic cloves or shallots, minced or mashed
1/2 cup butter, melted
1/2 pound vermicelli, cooked
2 - 3 cups chopped stuffed green or black olives
1/2 pound shredded sharp cheddar cheese
1/2 cup sour cream
1 (1-pound, 12-ounce) can tomato, drained and chopped
2 teaspoons salt
1/2 teaspoon basil
seasoned bread crumbs
butter, melted

Directions:

Break broccoli into smallest florets; discard all stems; boil 2 minutes and drain. In large frying pan, sauté onions, mushrooms, and garlic in butter until tender. Combine with remaining ingredients, except bread crumbs and butter, stirring until well mixed. Pour mixture into greased 3-quart casserole or baking dish. Sprinkle with seasoned bread crumbs and drizzle with melted butter. Bake, uncovered, in 350° oven for 35–45 minutes or until hot and bubbly. Can double easily.
