Pumpkin Apple Streusel Muffins

Ingredients

2 cups sugar
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon cloves
1/4 teaspoon nutmeg
2 teaspoons cinnamon
1/2 teaspoon ginger
2 eggs, slightly beaten
1 cup pumpkin
1/2 cup vegetable oil
2 cups peeled and diced apples

Streusel Topping:
2 tablespoons all-purpose flour
1/4 cup sugar
1/2 teaspoon cinnamon
4 teaspoons butter

Directions:

Mix dry ingredients in large bowl. Combine eggs, pumpkin, and oil; add to dry ingredients. Mix only until moistened. Stir in apples. Spoon into greased or paper-lined muffin tins, filling 3/4 full. Sprinkle with Streusel topping. Bake at 350° for 35–40 minutes or until toothpick comes out clean.

Streusel Topping:
Combine dry ingredients; cut in butter until mixture is crumbly.
