Cinnamon Breakfast Squares

Ingredients

1 cup peeled, seeded, and shredded zucchini
1/4 cup oil
1 teaspoon vanilla extract
1 egg
1/4 cup brown sugar
1/4 cup white sugar
1 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 tablespoon grated orange rind (optional)
butter or honey butter

Directions:

Combine zucchini with oil and vanilla. Stir in unbeaten egg. Add sugars and blend. Sift dry ingredients together and add to mixture. Stir until well mixed (do not beat). Blend in orange peel. Spread into a greased 8x8-inch pan. Bake at 350° for 30 minutes. Cool 10 minutes. Cut into squares and break open like muffins; spread with butter (honey butter is best).
