Bread in an Onion Ring

Ingredients

2 large onions (Idaho-Eastern Oregon)
1/4 cup yellow cornmeal
1/2 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
2 teaspoons sugar
1 1/2 teaspoons baking powder
1/2 cup milk
1 egg
1/4 cup bacon drippings or vegetable oil

Directions:

Peel onions and cut crosswise into 1/2-inch slices. Remove centers of slices to leave 1/2-inch-thick rings. Prepare batter by mixing rest of ingredients in order given. Place onion rings on griddle that has been coated liberally with oil and heated to 350° (medium heat). Fill each onion ring with batter and cook on one side. turn and cook on other side. Serve hot. very good with fish and coleslaw.
