Apple Orchard Easies

Ingredients

1/2 cup butter or margarine
2 cups sugar
2 tablespoons flour
1/4 teaspoon salt
1 cup pared, grated apple
3 cups quick rolled oats
1 cup chopped nuts
1 teaspoon vanilla extract
3 tablespoons sugar
3 teaspoons cinnamon

Directions:

Melt butter in a heavy pan; stir in sugar, flour, salt, and apples. Cook to boiling; boil for 1 minute. Remove from heat; Add rolled oats, nuts, and vanilla immediately. Mix thoroughly. Drop, using teaspoon, on wax paper. Cool. Roll in mixture of sugar and cinnamon.
