Turkey Chili

Ingredients

1/4 cup polyunsaturated oil
2 pounds ground turkey
1 onion, diced
3 cloves garlic, minced
1 tablespoon chili powder
1 teaspoon dried oregano
3/4 teaspoon chipotle powder
1/4 teaspoon dried red pepper flake
1 (28-ounce) can tomato purée
3 (15-ounce) cans pinto beans, drained
1 cup lager beer
1/2 cup low salt chicken stock
1 tablespoon red wine vinegar
1 teaspoon dried thyme
1 teaspoon sugar
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1/4 cup shredded Cheddar cheese

Directions:

In a large Dutch oven, heat 1 teaspoon of the oil until shimmering and add ½ the ground turkey. Cook stirring until the meat is browned and no pink remains. Place the cooked turkey in a bowl, add 1tablespoon of oil to the Dutch oven and brown the remaining ground turkey and add to the turkey in the bowl.

Add the remaining olive oil to the pot and sauté the onion and garlic until translucent, about 3 minutes. Add the chili powder, oregano, chipotle powder and red pepper flakes and cook for 2 minutes. Add the cooked turkey, tomato puree, beans, beer and chicken stock and bring to a boil. Stir in the broth and the vinegar, cover, reduce the heat and simmer for 45 minutes. Add the thyme, salt and pepper. Garnish each serving with 1 tablespoon of shredded cheddar cheese.
