Citrus Chicken

Ingredients

3 pounds boneless skinless chicken thighs, cut into 2 inch chunks
6 tablespoons extra virgin olive oil
2 orange bell peppers, seeded and cut into 1 inch pieces
1 large red onion, peeled and cut into 1 inch pieces
1 pound mushrooms caps
zest of 3 lime
juice of 3 lime
juice of 1 orange
1/4 cup fresh mint leaves
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 cup Greek tzatziki
wooden skewers

Directions:

Whisk the lime juice, lime zest, orange juice, salt pepper, mint and olive oil together in a bowl.

Thread one piece of pepper, then one piece of onion, then one mushroom cap and then one piece of chicken onto 2 skewers until all the vegetables and chicken are used. Arrange the skewers in a baking dish and pour the citrus sauce over them. Cover and refrigerate overnight.

Grill the skewers over high heat for 3 to 4 minutes on a side until the chicken is cooked and the vegetables begin to char. Coat the skewers with tzatziki before serving.
