Oven Fried Chicken

6 ounces oyster crackers
1 cup liquid egg substitute
1 tablespoon Dijon style mustard
1 teaspoon thyme
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
4 chicken thighs, skinned
4 chicken drumsticks, skinned


Pulse the oyster crackers in a food processor until broken up and transfer to a shallow bowl.

In a dish, mix the egg substitute, mustard, thyme, salt and pepper in another shallow bowl. Coat the chicken pieces in the egg mixture and then roll in the cracker crumbs until coated.

Set the chicken on a baking rack, spray with vegetable spray and bake at 400 degrees for 35 minutes.
