Grilled Chicken Tenders Athena

1/4 cup polyunsaturated oil
1 pound boned chicken tenders
1/2 cup Vidalia sweet onion, cut in wedges
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 orange, zested
1/2 teaspoon dried sage
8 kalamata olives, pitted and chopped
1/2 cup dry white wine
1/2 cup low salt chicken stock
2 ounces feta cheese, crumbled


Heat the oil in a sauté pan over medium high heat. Add the chicken in a single layer and add the onions, salt and pepper. Sear the chicken for 30 seconds per side and reduce the heat to low. Add the orange zest and cook the chicken for 8 minutes, turning when half done.

Pour off all the fat from the pan, set over medium high heat and add the wine to deglaze the pan. When the wine has cooked off, add the stock and simmer for 15 minutes.

Spoon the sauce over the chicken for serving and sprinkle with feta cheese.
