Chicken in Wine Sauce

1 3 pound broiling chicken, skin removed and cut into serving portions
1 tablespoon polyunsaturated oil
1 tablespoon extra virgin olive oil
1/2 cup dry vermouth
1 onion, diced
1 teaspoon extra virgin olive oil
1 clove garlic, minced
1 tomato, chopped
1/2 cup dry white wine
1/2 cup water
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper


Sauté the chicken in the polyunsaturated oil and the olive oil until browned and drain thoroughly.

Pour the vermouth over the chicken and flame it. Simmer the chicken until thoroughly browned.

In a separate pan, sauté the onion in the olive oil until translucent (do not brown). Add the garlic, chopped tomato, wine and water and simmer for 10 minutes. Add the chicken, salt and pepper, cover and simmer for 30 minutes.
