Chicken Marengo

1 3 pound frying chicken, skinned and cut into individual servings
1 1/4 teaspoons kosher salt
1/4 teaspoon freshly ground black pepper
1/4 cup polyunsaturated oil
2 cups sliced onions
1 pound sliced brown mushrooms
3 cloves garlic, minced
1 large can whole tomato
3/4 cup dry white wine
2 tablespoons flour


Rub the chicken with salt and pepper and brown in a skillet in the oil. Remove the chicken from the pan and drain on paper towels. In the skillet, sauté the onion, mushrooms and garlic. Add the tomatoes, cover and simmer for 30 minutes. Set aside in a casserole.

Blend the flour with a small amount of liquid in the skillet, then stir in the rest of the liquid until thickened. Pour the mixture over the chicken and bake covered at 350 degrees for 20 minute.
