Chicken Casserole

1 onion, chopped
1 tablespoon polyunsaturated margarine
1 (4-ounce) can sliced mushrooms, drained
2 cooked chicken breasts, broken into pieces
2 ounces pimiento, sliced
3/4 cup shredded Sapsago cheese
2/3 cup skim milk
1/2 cup cornflakes


Sauté the onion in the margarine. Combine the onion and the ingredients except for the milk and 2 tablespoons of shredded cheese and toss lightly.

Turn the mixture into a casserole, pour the milk over the casserole and sprinkle with the remaining cheese. Cover with corn flakes and bake at 375 degrees for 30 minutes.
