Chicken Cacciatore

4 chicken legs including thigh and leg, skinned and cut in separte servings
3 tablespoons polyunsaturated oil
1 clove garlic, minced
1 large onion, chopped
1 (16-ounce) can diced tomato
1/8 teaspoon thyme
1/4 teaspoon marjoram
1 teaspoon oregano
1 teaspoon basil
1 bay leaf
1/2 cup dry white wine
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 teaspoon sugar


Saute the chicken in the oil until browned on all sides. Add the garlic and onion and cook until the onion is browned. Add the tomatoes, thyme, marjoram, oregano, basil, wine, salt, pepper and sugar. Simmer covered for 45 minutes.
