Southwestern Meat Loaf

Ingredients

1 pound ground beef
1 cup frozen corn
3/4 cup salsa
1/3 cup uncooked regular oatmeal
2 tablespoons dried chopped cilantro
1/2 cup chopped onion
1 tablespoon chili powder
1 egg, slightly beaten
3 tablespoons ketchup

Directions:

Preheat oven to 375 degrees.

Combine all ingredients except ketchup. Press meat mixture into a loaf pan. Spread ketchup over top. Bake for 50 minutes, or until internal temperature reaches 165 degrees, or until meat is no longer pink in the middle.
