Meat Loaf in an Onion

Ingredients

1 pound ground beef
1 egg, slightly beaten
1/4 cup dry bread crumbs
1/4 cup tomato sauce
1/8 teaspoon pepper
1/2 teaspoon salt
1/2 teaspoon dry mustard
6 large onions, peeled

Directions:

Preheat oven to 350 degrees.

In a medium bowl, combine ground beef, egg, breadcrumbs, tomato sauce, pepper, salt, and mustard. Set aside.

Cut onions in half horizontally and remove centers, leaving 1/4-inch thick shell. Chop onion centers and add 3 tablespoons to meat mixture. Spoon mixture into 6 onion halves. Top with remaining onion halves. Roll in aluminum foil. Bake 25–35 minutes, or until meat is no longer pink.
