Beef and Potato Pie

Ingredients

1 1/2 pounds ground beef
2 large potatoes, peeled and cubed
salt and pepper
1 (16-ounce) container cottage cheese
2 eggs
1/2 cup sour cream
1 teaspoon oregano
2 deep dish pie shells
2 cups grated Cheddar cheese

Directions:

In a frying pan, brown ground beef until no longer pink. Drain if necessary.

In a pot, boil potatoes in salted water until tender. Drain and mash potatoes. Season with salt and pepper to taste.

In a blender, blend cottage cheese, eggs, sour cream, and oregano until smooth. Stir cottage cheese mixture into potatoes. Divide ground beef between the two pie shells. Spread potato mixture evenly over ground beef. Sprinkle cheese over top. Bake for 30–35 minutes and serve.
