Herbes De Provence

Serves: 5


3 tablespoons rosemary, dried
3 bay leaves
3 tablespoons basil, dried
3 tablespoons marjoram, dried
3 tablespoons dried summer savory
3 tablespoons oregano, dried
2 tablespoons thyme, dried
1 teaspoon fennel seeds
1 teaspoon dried lavender
1 teaspoon white pepper, freshly ground
1 teaspoon coriander, ground


In a small bowl crumble the rosemary and bay leaves between your fingers to break them into small pieces. Whisk in the remaining ingredients. Store the herbes de Provence in an airtight jar away from heat and light for up to 6 months.

Makes about 1 1/4 cups enough for 8 pounds meat, poultry, or seafood
