Creole Rub Seasoning

Makes about 3/4 cup; enough for 4 pounds seafood or poultry

This seasoning, suffused with the warm glow of paprika and cayenne, lies at the very soul of Creole cooking. Use it to spice up seafood (especially shrimp and crawfish) as well as chicken.


   _ tbs paprika
   _ tbs salt
   _ tbs garlic powder
   _ tbs black pepper, freshly ground
   _ tbs onion powder
   _ tbs cayenne pepper
   _ tbs oregano, dried
   _ tbs thyme, dried


Combine all the ingredients in a jar, twist the cap on airtight, and shake to mix. Store away from heat and light for up to 6 months.

Makes about 3/4 cup; enough for 4 pounds seafood or poultry
