Here’s a sweet, boozy baste from Tennessee that’s great on grilled or barbecued pork. To make a Caribbean version, substitute dark rum for the bourbon and pineapple juice for the apple cider. Use this sauce to baste grilled or smoked pork.
_ tbs butter, salted (1 stick)
_ c apple cider
___ c brown sugar, firmly packed, dark
_ tbs lemon juice, fresh
___ tsp salt, or more as needed
___ tsp black pepper, freshly ground
_ c bourbon
1. Melt the butter in a medium-size saucepan over medium heat. Add the cider, sugar, lemon juice, 1/2 teaspoon salt, and pepper. Increase the heat to high and bring to a boil. Boil until slightly thickened, about 5 minutes.
2. Remove from the heat and stir in the bourbon. Taste for seasoning, adding salt as necessary. The basting sauce keeps, covered in the refrigerator, for up to 1 week. Reheat over low heat before using.
Makes about 2 1/2 cups
