In a small saucepan, combine sugar, cornstarch and salt. Stir in milk; cook and stir over medium heat until thickened. Reduce heat to low; continue cooking and stirring for 2 minutes. Place egg yolks in a small bowl. Add a small amount of hot milk mixture to yolks; stir and return all of yolk mixture to pan, stirring constantly. Bring to a gentle boil; cook and stir one minute longer. Remove from heat; add butter, vanilla and nutmeg. Let cool in pan for 15 minutes, stirring every 5 minutes. Transfer to dessert bowls; cover and refrigerate. May be served slightly warm or cold.
