Grandma Great’s Chicken Casserole

4 to 5 boneless, skinless chicken breasts
1 green pepper, chopped
2 onions, chopped
1/2 cup oil
1 (4-ounce) can sliced mushrooms, drained
2 (2-ounce) jars sliced pimientos, drained
1 (8-ounce) package pasteurized process cheese spread, shredded
1 (16-ounce) package thin spaghetti, cooked


Place chicken in a large saucepan; add water to cover. Simmer over medium heat until tender, about 30 minutes. Remove chicken and cool. Drain saucepan, reserving 2 cups broth. In the same pan, cook pepper and onions in oil; drain. Stir in reserved broth, mushrooms and pimentos, if desired; bring to a simmer. Chop chicken and add along with cheese and spaghetti. Transfer to a lightly greased 2-quart casserole dish. Cover and bake at 350 degrees for 30 minutes. Uncover; continue baking until lightly golden on top and liquid is absorbed, 20 to 30 minutes.
