Howard's Fish And Seafood Rub

Ingredients

5 to 8 pounds catfish filets, shrimp or oysters
2 cups cornmeal
1 cup flour
1 teaspoon pepper, finely ground
1/2 teaspoon garlic powder
3 to 4 teaspoons salt
peanut oil for deep frying

Directions:

Soak the fish or seafood in cold water. Mix all the dry ingredients in a large bowl or pan. Preheat the oil to about 350°F. Roll the fish or seafood pieces in the corn meal mixture and place them in the hot grease. Use a slotted spoon or tongs to turn the pieces, not a fork. Cook pieces until they are golden brown and float to the surface, approximately 3-6 minutes for fish, depending upon the size of the pieces of fish, and 2-3 minutes for shrimp and oysters.
