Riding into someone’s camp while on a horse trip about suppertime occasionally results in an invitation for dinner. A successful sheep hunter and his pardner were just fixing to eat dinner one such evening when I pulled into an adjacent camp. They had packed their ram back into camp the day before, and had spent the day recuperating as they slow cooked a loin roast over a bed of Mountain Mahogany coals. Never one to pass up a chance to eat bighorn sheep, I took them up on their invitation. I’ve since used this on domestic lamb using fresh rosemary.
