In the last several years, the Spanish cheese Manchego has become widely available. This subtle dry cheese pairs beautifully with dried fruits and nuts for a sophisticated beginning to your meal. Serve with Campari and soda with a twist of lime, or a nice, velvety Pinot Noir.

12 large plump dates, halved and pitted
1 cup salted pistachio nuts
