Grilled Lamb Chops With Roasted Grape, Olive, And Walnut Relish |

Serves: 6
Though lamb chops are a bit pricey, there's really nothing like them for a dinner party: they're easy to cook and eat. A simple coating of olive oil, salt, and pepper is all that's needed, but feel free to rub both sides with Dijon mustard and some minced fresh rosemary, if you prefer.
12 loin lamb chops, each 1 inch thick
2 tablespoons olive oil
1 1/2 tablespoons sea salt
1 1/2 tablespoons freshly ground pepper

Prepare a fire in a charcoal grill or preheat a gas grill to medium-high. Rub the chops with olive oil and sprinkle with the salt and pepper.
Place the chops on the grill rack and cook for 4 to 6 minutes on each side for medium-rare. (Use a sharp knife to cut into one of the chops; the meat should be juicy and pink.)
Serve with the relish.
