Whole Wheat Pancakes or Waffles

Serves: 6

1 1/4 cups whole wheat flour, sifted
3 teaspoons baking powder
3 tablespoons sugar
3/4 teaspoon salt
3 eggs well beaten
1 1/4 cups milk
3 tablespoons vegetable oil


Stir together dry ingredients. Combine eggs, milk, and oil stir into flour mixture. Bake on lightly greased griddle until golden brown, then turn. Or bake in waffle iron. Makes 12 pancakes or waffle sections.
Note: For lighter pancakes or waffles, eggs may be separated blend egg yolks with milk and cooking oil for batter fold stiffly beaten egg whites into batter just before baking.
