Whole Wheat Muffins

1 cup flour, sifted
1 cup whole wheat flour, sifted
1/2 teaspoon salt
4 teaspoons baking powder
1/2 cup brown sugar, packed
1 cup milk
2 eggs slightly beaten
1/3 cup vegetable oil


Grease 12 large (2 1/2 inch) muffin cups or use cupcake liners. In large mixing bowl blend all-purpose flour and whole wheat flour, salt, baking powder, and brown sugar. Combine milk, eggs, and oil stir just until dry ingredients are moistened. Spoon batter into prepared pans. Bake at 425 degrees F. for 15 minutes or until done. Makes 12 muffins.
Note: 1/2 cup coarsely chopped raisins, dates, or nuts or a combination of these may be added, if desired.
