Fried Peppers And Zucchini

Serves: 4

2 red bell peppers medium, seeded and cut in 1/2 " strips
2 zucchini medium, cut in 1/2 " strips
1 garlic medium clove, minced
2 tablespoons olive oil
1/2 teaspoon salt
1/8 teaspoon black pepper freshly ground
2 tablespoons parsley minced fresh (optional)


In a large skillet sauté peppers, zucchini and garlic in olive oil until zucchini is golden. Sprinkle with salt and pepper. Cover and simmer for 4 to 5 minutes or until crisp-tender.

To serve, sprinkle with parsley, if desired.
