_ cup onions finely chopped
___ cup butter or margarine
___ pound mushrooms fresh, sliced
_ cup pearl barley
_ cups chicken broth boiling or bouillon
Salt and freshly ground pepper
___ cup almonds toasted slivered
Preheat oven to 350° F. Grease a 1 1/2 -quart casserole. In a large skillet, sauté onion in butter or margarine for 4 minutes; add mushrooms and sauté 4 minutes longer. Add barley; cook and stir to lightly brown barley.
Add broth or bouillon and salt and pepper to taste. Pour into casserole. Cover and bake for 60 minutes or until barley is tender and liquid is absorbed.
