2 cups flour
2 teaspoons baking soda
2 teaspoons cinnamon ground
1 1/2 cups sugar
2 teaspoons salt
2 7 1/2-ounce jars carrots junior-sized (baby food)
1/2 cup vegetable oil
4 eggs well beaten
1/2 cup pecans chopped or walnuts

Mix dry ingredients; add carrots, oil, beaten eggs and nuts. Mix and bake in 2 greased and floured 7 1/2 x 3 1/2 x 3 1/4 -inch loaf pans in a preheated 375° F oven for 45 to 50 minutes or until done.
Note: This batter is rather thin.
