Drain cottage cheese in sieve press down firmly until all liquid has been pressed out. In mixing bowl beat eggs until thick. Add cottage cheese, butter, flour, and salt mix only enough to blend. Drop by large spoonfuls onto buttered, moderately hot griddle or frying pan. Turn gently with spatula when lightly browned on underside bake on other side until light brown. Serve warm. Makes 12 pancakes.
