Company Spinach

Ingredients

2 (10-ounce) packages spinach thawed
3 tomatoes large, peeled
1/2 teaspoon garlic salt
1/4 teaspoon salt
Freshly ground pepper to taste
1/4 cup bread crumbs
1/3 cup Parmesan cheese grated
1/3 cup green onion chopped or 1 tablespoon instant minced onion
1/4 cup butter or margarine, melted
1/2 teaspoon garlic powder
1/2 teaspoon thyme dried, crushed
2 eggs beaten

Directions:

Heat oven to 350° F. Drain thawed spinach, pressing against sides of sieve to remove all moisture. Slice tomatoes into 10 to 12 thick slices lay in a greased shallow baking dish and sprinkle with garlic salt, salt, and pepper to taste. Toss bread crumbs with Parmesan cheese set aside. Mix spinach with remaining ingredients and spoon on top of tomato slices. Sprinkle on crumbs and cheese mixture. Bake for 30 minutes.
