Chinese Broccoli

Ingredients

2 (10-ounce) packages frozen broccoli spears thawed
2 tablespoons vegetable oil
8 green onions cut in 1 1/2 -inch pieces (including greens)
1 tablespoon soy sauce
1/2 teaspoon sugar
1/2 teaspoon cornstarch
1/2 cup chicken broth (your own or canned)
Salt and freshly ground pepper to taste

Directions:

Cut broccoli spears into 1 1/2 -inch pieces. Heat vegetable oil in large skillet until very hot. Add green onions and stir-fry for 2 to 3 minutes. Stir in broccoli pieces over high heat. Combine soy sauce, sugar, cornstarch, and chicken broth. Add to vegetables and continue cooking over medium heat for 5 minutes or until tender. Check for additional salt and pepper. Vegetables should be crisp.
