Chinese Broccoli

   _ 10-ounce packages frozen broccoli spears thawed
   _ tablespoons vegetable oil
   _ green onions cut in 1 1/2 -inch pieces (including greens)
   _ tablespoon soy sauce
   ___ teaspoon sugar
   ___ teaspoon cornstarch
   ___ cup chicken broth (your own or canned)
   Salt and freshly ground pepper to taste


Cut broccoli spears into 1 1/2 -inch pieces. Heat vegetable oil in large skillet until very hot. Add green onions and stir-fry for 2 to 3 minutes. Stir in broccoli pieces over high heat. Combine soy sauce, sugar, cornstarch, and chicken broth. Add to vegetables and continue cooking over medium heat for 5 minutes or until tender. Check for additional salt and pepper. Vegetables should be crisp.
