Alexander Kuka(Latvian Jam-Filled Bars)

Ingredients

Cookie Layer
1 cup sugar
1/2 cup butter softened
1/2 cup margarine softened
1 egg large
1/4 teaspoon lemon juice
2 cups flour
Filling
3/4 cup apricot, raspberry, or other preserves
Glaze
1/2 cup powdered sugar sifted
1 tablespoon lemon juice

Directions:

1. Heat oven to 350°. Lightly grease a 15 1/2 x 10 1/2 x 1-inch baking pan.

2. To make cookie layer, beat sugar, butter, and margarine in a medium bowl with electric mixer until fluffy. Beat in egg and extract. On low speed, gradually beat in 1 cup of the flour. By hand, stir in remaining flour (dough will be very stiff). Spread evenly in prepared pan. Bake 15 to 20 minutes until golden (do not overbake). Cool on a wire rack. Cut in half to form 2 rectangles about 7 1/2 inches by 10 inches.

3. For filling, spread top half of one rectangle with preserves. Invert second rectangle on top of filling. Wrap with aluminum foil. Let stand 1 or 2 days. Turn over once to let cookie layers absorb the preserves and soften.

4. To make glaze, 1 to 2 hours before serving, stir together powdered sugar and lemon juice. Spread glaze over top cookie layer. Let stand until set. Cut into bars.
