1 cup vegetable oil
1/2 cup skinless raw peanuts
Salt
Heat oil in wok to 350°. Fry peanuts until light brown. Remove from wok; drain on paper towels. Sprinkle lightly with salt.

**Instead of roasting nuts as most Westerners do, Chinese cooks usually fry them until light brown. It's a quick and easy process that doesn't dry out the nut meat.
