2-Pound Recipe
_ 1/2 cups plus 1 tablespoon water
_ tablespoon vegetable oil
_ tablespoons honey
_ cups bread flour
___ cup mashed potato mix (dry)
_ cup old-fashioned oats or quick-cooking oats
_ teaspoon grated lemon peel
_ teaspoon dried thyme leaves
_ teaspoons salt
_ teaspoons bread machine or quick active dry yeast
Make 1 ½ Pound Recipe with bread machines that use 3 cups flour, or make 2 Pound Recipe with bread machines that use 4 cups flour.
Measure carefully, placing all ingredients in bread machine pan in the order recommended by the manufacturer.
Select Basic/White cycle. Use Medium or Light crust color. Do not use delay cycles. Remove baked bread from pan, and cool on wire rack.

TRY THIS: Using olive oil instead of the vegetable oil will add a subtle flavor change that goes nicely with the thyme and lemon flavors.
DID YOU KNOW? Old-fashioned and quick-cooking oats are interchangeable in most recipes. However, instant oats can't replace either in recipes because instant oats are precooked and dried before being rolled into flakes. The precooking softens the oats, so when they are combined with liquid in baked goods, they can become gooey lumps.
