1 1/2-Pound Recipe
_ cup plus 1 tablespoon water
_ 1/2 teaspoons salt
___ cup honey
_ 1/2 cups bread flour
_ 1/2 cups whole wheat flour
_ tablespoon plus 1 1/2 teaspoons shortening
_ tablespoon dry milk powder
_ teaspoon bread machine or quick active dry yeast
Make 1 ½ Pound Recipe with bread machines that use 3 cups flour, or make 2 Pound Recipe with bread machines that use at least 4 cups flour.
Measure carefully, placing all ingredients in bread machine pan in the order recommended by the manufacturer.
Select Whole Wheat or Basic/White cycle. Use Medium or Light crust color. Do not use delay cycles. Remove baked bread from pan, and cool on wire rack.

SUCCESS TIP: We found from our testing that the same amount of yeast is needed for both the 1 ½-pounc and 2-pound loaves.
SUCCESS TIP: We mix whole wheat flour with bread flour to combine the best traits of both flours in one loaf. The whole wheat flour adds a wholesome nuttiness to the bread and the bread flour contains lots of gluten, so it gives the bread volume and a nice texture. Bread made with just whole wheat flour won't rise as high, since the flour doesn't have as much gluten-forming protein. We recommend using about half whole wheat and half bread flour in bread recipes.
SANDWICH BOARD: Whole wheat bread is good with just butter, but you'll love the crunchiness of this Lemon Poppy Seed Butter. Using an electric mixer, beat a stick (1/2 cup) of softened margarine or butter with 1 tablespoon finely shredded lemon peel and 1 teaspoon poppy seed, until it is light and airy. This will give you about ½ cup butter to enjoy.
