Rich Coconut Dessert

Ingredients

9 egg yolk
3 whole eggs
2 1/3 cups sugar
1/8 pound butter
1 grated coconut (substitute 1 12-oz package coconut)

Directions:

Typical coconut dessert.

Very rich and very good!!

Beat egg yolks then add 3 whole eggs. Slowly add sugar and butter. Fold in 1 grated or package coconut.

Grease very small individual tins, or a regular round cake pan with butter. Dust with sugar. Pour in the pudding and bake in a 350 degrees oven for 50 minutes.

Be sure to place pan in another pan with about an inch of hot water for baking. Individual tins will take less time.

Chill. When very cool, turn over onto a round dish.

NOTE: This is a beautiful dessert with a clear yellow color on top and coconut on the bottom.
