Pumpkin Dessert


Serves: 8

Ingredients

1 pumpkin
sugar (of equal weight with cleaned pumpkin)
cloves
stick cinnamon
vanilla extract

Directions:

Peel a pumpkin and cut into pieces. Weigh the prepared pumpkin so you can use the same weight of sugar.

Cook the pumpkin pieces in a heavy pan. Add very little water as pumpkin pieces will give off liquid.

Cook with cloves and stick cinnamon.

When the pumpkin is well cooked, strain it, pressing with the back of a spoon to push the pumpkin meat through the strainer.

Return the strained pumpkin to the stove and add the sugar mentioned above and cook over very low heat until it thickens and pulls away from the pan. Add a few drops of vanilla.

Let cool and place in a compote dish.
