MAKING AN ICE RING

Here’s an easy way to make an ice ring for chilling a bowl of punch, using a ring mold or bundt cake pan. Make sure the mold you choose is smaller than your punch bowl. Arrange 1/4-inch slices of lemons, limes and oranges or other sliced fruit or berries in ring mold. Slowly add just enough water or fruit juice to partially cover fruit (too much water will make the fruit float) freeze. When frozen, add enough water or juice to fill mold three-fourths full freeze overnight to make sure ice ring is solid. When you’re ready to serve the punch, run hot water over bottom of the mold to loosen the ice ring. Remove the ice ring from the mold, and float it, fruit side up, in the punch. Or use the same method to make floating ice disks from muffin cups, which take less time to freeze.
