Crostini is Italian for "little toasts." These crunchy bites can be topped with a variety of savory foods for delicious appetizers. We’ve used fresh tomatoes, basil and mozzarella, but feel free to experiment with different spreads and toppings.


   __ slices Italian bread, 1/2 inch thick
   ___ cup olive or vegetable oil
   _ large tomato, chopped (1 cup)
   _ tablespoons chopped fresh basil leaves
   _ tablespoon large capers or chopped ripe olives
   ___ teaspoon salt
   ___ teaspoon pepper
   __ slices (1 ounce each) mozzarella cheese


1. Heat oven to 375°.

2. Place bread slices on ungreased cookie sheets. Drizzle 1 teaspoon oil over each slice bread.

3. Mix tomato, basil, capers, salt and pepper. Spread half of the tomato mixture over bread slices; top each with cheese slice. Spread remaining tomato mixture over cheese.

4. Bake about 8 minutes or until bread is hot and cheese is melted. Serve hot.
