Southern-Fried Catfish

Ingredients

vegetable oil
1 1/4 cups cornmeal
1 teaspoon salt
1/2 teaspoon ground red pepper (cayenne)
1/4 teaspoon pepper
6 small catfish (about 1/2 pound each), skinned and pan dressed
1/2 cup all-purpose flour
2 eggs, slightly beaten

Directions:

1. Heat oven to 275°.
2. Heat oil (1/2 inch) in 12-inch skillet over medium-high heat until hot. Mix cornmeal, salt, red pepper and pepper reserve.
3. Coat catfish with flour dip into eggs. Coat with cornmeal mixture. Fry catfish, 2 at a time, until golden brown, about 6 minutes on each side. Keep warm in oven while frying remaining catfish. Garnish with lemon wedges if desired.
