Seafood a la Newburg

Ingredients

2 eggs yolks
1/4 cup margarine or butter
1/4 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
2 cups milk
1 tablespoon sherry or lemon juice
2 cups cut-up cooked seafood
Baking Powder Biscuits or toast points
BAKING POWDER BISCUITS
1/2 cup shortening
2 cups all-purpose flour
1 tablespoon sugar
3 teaspoons baking powder
1 teaspoon salt
3/4 cup milk

Directions:

1. Beat egg yolks with fork in small bowl. Melt margarine in 2-quart saucepan over low heat. Stir in flour, salt and pepper. Cook over medium heat, stirring constantly, until smooth and bubbly remove from heat. Gradually stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute.
2. Immediately stir at least half of the hot mixture into egg yolks stir back into hot mixture in saucepan. Boil and stir 1 minute remove from heat. Stir in lemon juice and seafood. Heat until seafood is hot.
3. Serve over hot biscuits.
