Rise and Shine Waffles

Ingredients

3/4 cup old-fashioned oats
1/4 cup packed brown sugar
1 cup milk
2 egg whites, slightly beaten, or 1/4 cup fat-free cholesterol-free egg product
3 tablespoons margarine or butter, , melted
2/3 cup all-purpose flour
2 tablespoons wheat germ
2 teaspoons baking powder
1/4 teaspoon baking soda
1 teaspoon grated orange peel
Maple Yogurt Topping
Grated orange peel, if desired
chopped cranberries, if desired
MAPLE YOGURT TOPPING
1 cup plain fat-free yogurt
1/4 cup maple syrup

Directions:

RISE AND SHINE WAFFLES
1. Mix oats, brown sugar and milk in large bowl let stand 10 minutes. Stir in egg whites and margarine. Stir in flour, wheat germ, baking powder, baking soda and 1 teaspoon orange peel.
2. Spray nonstick waffle iron with nonstick cooking spray heat waffle iron. Pour about 1 cup batter from cup or pitcher onto center of hot waffle iron. (Waffle irons vary in size check manufacturer's directions for recommended amount of batter.) Close lid of waffle iron.
3. Bake 4 to 5 minutes or until steaming stops. Carefully remove waffle. Top with Maple Yogurt Topping. Garnish with orange peel and cranberries.

MAPLE YOGURT TOPPING
Mix ingredients until well blended.
