Dissolve yeast in warm water. Beat sugar, margarine, egg, and yeast mixture with several cups flour. Knead in the remaining flour. Cover dough with aluminum foil and refrigerate from 2–24 hours. Divide dough into 16 pieces. Roll into 20-inch-long strips and shape into Pretzels. Place on greased cookie sheet.
Combine egg yolk and water and brush each Pretzel. Sprinkle with coarse salt. Let rise 20 minutes. Bake at 350° for 20 minutes.
