Apple Butter

Yield: 3 1/2 quarts, or 7 pints

Ingredients

12 pounds tart cooking apples, peeled, cored, and quartered (in the fall, use Winesap apples)
2 cups water
3 1/2 cups granulated sugar
1 cup cider vinegar
1 teaspoon cinnamon

Directions:

Cook the apples and water in a pan over low heat until soft, about 20 minutes. Rub through a food mill.

Add the sugar, cider vinegar, and cinnamon, mixing well. Put mixture in a heavy roaster pan, uncovered, and cook in a preheated 375° oven for approximately 2 1/2 hours, stirring every 15 minutes with a wooden spoon. The Apple Butter is thick enough when you can put 2 tablespoons of the mixture on a saucer and turn it upside down without it dropping off. Ladle into hot sterilized pint or quart jars and seal.
