Make-Ahead Breakfast Casserole

2 1/2 cups seasoned croutons
1 pound ground spicy pork sausage, browned and drained
4 eggs
2 1/4 cups milk
1 (10 3/4-ounce) can cream of mushroom soup
1 (4 1/2-ounce) can mushrooms, drained and chopped
1 (10-ounce) package frozen chopped spinach, thawed and well drained
1 cup shredded sharp Cheddar cheese
1 cup shredded Monterey Jack cheese
1/4 teaspoon dry mustard


Spread croutons in a greased 13"x9" baking pan; top with sausage and set aside. Whisk together eggs and milk in a large bowl until well blended. Stir in remaining ingredients. Pour egg mixture over sausage and croutons; cover and refrigerate overnight. Bake at 325 degrees for 50 to 55 minutes, until set and golden on top.
