Koktuli Fruit Galette

Ingredients

1 (9-inch) round of puff pastry well-chilled
2 tablespoons all-purpose flour
1/2 cup sugar, divided
4 firm, ripe, unpeeled nectarines, halved, pitted and thinly sliced
1 egg yolk
1 tablespoon heavy cream
1 tablespoon cold unsalted butter, cut into small pieces

Directions:

Preheat oven to 400°. Place the circle of puff pastry (available in frozen food section of grocery store) on a parchment-lined baking sheet. With the tines of a fork, prick the pastry surface except for a 1/2-inch rim. Sprinkle only the punctured area of the circle with flour and 1/4 cup sugar.

Starting just inside the unpunched edge, arrange the nectarine slices, with cut edges toward the center, in concentric circles covering the pastry entirely.

Beat egg yolk with heavy cream to make a glaze. Brush egg yolk glaze on just the exposed rim of puff pastry, sprinkle the remaining 1/4 cup sugar on top of the fruit and dot with butter. Bake for 18–20 minutes at 400° until the fruit is tender and the pastry has puffed and turned golden brown. Serve immediately.


Fun Fact: A nectarine is a fuzzless variety of peach. It is NOT a cross between a peach and a plum.
